What’s for dinner?

As you know my dinner tonight was grilled chicken, carbonara pasta, and cottage cheese. I love the pasta, while CC is one of Addy’s faves.

Grilled chicken: I use Perdue Fit ‘n Easy thin sliced boneless skinless chicken breasts. I put fresh cracked pepper on them and McCormick’s Parmesan Herb seasoning. Put them on an olive oil coated George Forman until they’re cooked!

For the pasta:

  • 5 oz pancetta (streaky bacon will do if you cannot find pancetta, most supermarkets now carry it in the delicatessen department), very small cubes
  • 1 TBSP butter
  • 3 eggs
  • 1/4 cup Parmesan cheese
  • 1/4 cup pecorino cheese (all Parmesan if you can not find pecorino)
  • Nutmeg
  • 1 1/2 to 2 TBSP parsley, chopped
  • Salt & freshly ground black pepper
  • 1 lb penne

OO Pasta pot

MELT the butter over medium heat in a pan large enough to eventually hold both the pasta and the sauce.
As soon as the butter is melted, add the diced bacon and cook till crisp and light brown.
At the same time bring a large pot of salted water to a rolling boil.
Add the pasta and stir to separate with a wooden spoon or fork. Cook till done.
MEANWHILE, in a bowl, beat the eggs along with the Parmesan, pecorino, lots of freshly ground pepper, and a ¼ tsp of nutmeg or more to taste.
ADD 1 T parsley to mixture and stir.
WHEN pasta is done, drain (reserve a few tablespoons of the cooking liquid) and add to the pan with the oil, butter and bacon mixture.
TURN the heat on to very, very low and add the egg/cheese mixture, stirring continuously for a couple of minutes until eggs are heated through. (They will lose their glassy appearance.)
SPRINKLE with the remaining parsley.
REMOVE pan from heat, and serve immediately. YUM! I put more freshly grated Romano cheese on mine (Its cheaper than fresh parmesan!) $4.99 for 8 oz. at Meijer =) I also added a few sun dried tomatoes chopped finely this time!

As for cottage cheese, well you know the drill. Grab a spoon and pile it on your plate. Lol

It was very tasty I must add, and my first time with this recipe.

Back to School– for less $$$

Those of you in the IN area… I have a couple of back to school deals I found at my favorite place on Earth. Wal Mart. Sense the sarcasm. I hate that place with a passion, but continue to go back for deals.
$1- 10 fine tip Crayola markers, 10 wide tip Crayola markers, 2 pk. Sharpie markers, 10 Crayola colored pencils, select packages of pens/pencils.
25¢- 24 pk. Crayola crayons, Single Elmer’s squeezable school glue, 2 pk. Elmer’s glue sticks, plastic rulers, single subject notebooks.
15¢- Folders!

Other things that were cheap, but I didn’t get the exact price: Briteliner highlighters, super sticky post-its, poly folders, loose leaf notebook paper, and select packages of Papermate pens (under $1 I believe!)

On to Target, they have a lot of the same items too. However, I have only seen Rose Art supplies near Wal Mart’s prices (Not Crayola!). Target has Bic Cristal pens for 60¢ a package this week! Pair with the coupon on
Go to the lower left-hand corner and click on coupons, then go to the school supplies category. The coupon you are looking for is $1/2 Bic stationery items. If you use this coupon, you will only pay 10¢ per pack of 10 pens! That’s on 1¢ per pen!
I will keep my eye out for more deals.
Let me know if you are looking for anything in particular!
