What’s for dinner?

Okay, since I promised you (my readers) I’d post more recipes since I’m home full-time now, here’s tomorrow’s dinner recipe. I’ll be sure to update this post to let you know just how yummy it turns out! Dinner in this house generally means lunch, but not tomorrow.
(I’ve made this before, but a bit differently)

Quesadilla Bake
Ingredients you will need:
2 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Minced Garlic (dried is ok but I prefer the kind in the jar that is fresh)
1/2 tsp oregano
1/2 tsp crushed red pepper (if you like spicy!)
1 lb ground beef (I prefer cooked shredded boneless skinless chicken breast because I don’t like beef!)
1/2 cup chopped sweet onions
2- 8 oz cans of tomato sauce
1- 15 oz can of black beans (Addy’s Fav!!)
1- 8 3/4 oz can whole kernel corn, drained
1- 4 1/2 oz can green chiles, chopped and NOT drained
6- 8 inch round flour tortillas
2 cups shredded cheddar cheese (that’s 1 8 oz pkg)

Okay, so there are a lot of ingredients, but to make it easier you can buy a packet in the spice aisle from McCormick that contains all the spices. Tip- it costs over $2 so I just use the jarred dried spices I already have!

Pretty straightforward from here: Cook the meat (drain if you use beef) I cook the chicken in the crock pot the morning or day before.. Add the tomato sauce, beans, corn, and green chiles. Mix it all up! Next, stir in all the spices (except red pepper). Taste, and add red pepper as desired.

Put 1/3 meat mixture into the bottom of a 9×13 pan sprayed with no-stick spray (if that’s how you roll). Cover with 3 tortillas. Add 1/3 more beef, the 1/2 cheese. Cover with tortillas, and repeat!
Bake at 350º for 15 mins!
I serve this with Spanish rice, chips (for snacking!) sour cream, and salsa!

This recipe was WONDERFUL. I added the red pepper and it may be too spicy for little ones. I wasn’t sharing the whole dish (just the black beans) so it was okay. Let me know how yours turns out. I’m not a good food photographer so I apologize for not adding a picture!

The little things..

You don’t have to tell me, I already know. My daughter is completely spoiled. I wouldn’t have it any other way. After all, why have kids if you can’t give them everything they don’t need?
This toy.. cheap, doesn’t make noise and she LOVES it. Happiness is what counts with little ones.

This toy– I’ve searched high and low and was willing to pay $50 for one of these bad boys. Addy’s Nana has one at her house and she loves it. I finally found one today at a resale shop here in town. $3. She’ll love it for years and after a good once over with Clorox, it’s as good as new.



































And this, is EXACTLY how Addy left her toybox when it was nap time today. Took her hairbow out, sat it on the floor next to her 2 favorite toys and followed me to her room for some Zzzzz’s. Okay, so my first day on this job isn’t that bad. What a relief! I was a bit nervous, but the rewards for this job are far better than any other job in the world.

A entirely new beginning…

So, I’ve referred to myself as ‘Penny Pinching Mom’ for a while now (out here in cyber world anyway). My new official job title, Addy’s Mommy. Ok, that’s a bit much, but really that is my new job. Taking care of my little one, watching her grow and change, and protecting her from all the harm this crazy world has to offer.

It was a hard thing to do and will cut me even more short on cash, but I’m going to have to pinch some more ¢ents! As is stands, I’ve saved over $1000 in August. If I keep this trend up, I’ll end up way over $2000 per month by this time next year. In August, I got about $300 in FREE stuff. Yep, totally free products (with coupons!!).

I can’t tell you the last time I had a ‘last day on the job’ but I know it was much more pleasant than today. I guess I thought people would want to bid me farewell a little more kindly. Guess I must have pee’d in someone’s cornflakes at some point. Oh well, life goes on. And remember, I now have letters after my name which means something besides thousands in student loan debt. Ashley Carter, B.S.B.A. (and soon) M.S.E. That makes me not only look important, but it gives me self-fulfillment because my Grandpa Joe always wanted me to go to college and make something of myself. Staying at home is only temporary until I finish my Master’s, but I’m going to soak up EVERY single minute of it! I ❤ my little princess like crazy and wish I could have been home with her sooner.

A did you know? … Miss Addysen gets her middle name from my Grandpa Joe.. except hers' is Jo. The most fitting name in the world for that little girl. Is she ever a spitting image of my Grandpa! She has his contrary attitude and things MUST be done her way. Oh, did I say I LOVE that my new boss is a 1 year old? I do, thoroughly.

What a week!

It’s been one of those weeks where I’ve been so busy I’ve barely had time for myself. One of the coolest things I’ve done this week… take some ADORABLE pics of my best friend’s kids. I’ll share a couple at the bottom of this blog entry! **** Must add there was a freaking SNAKE that went slithering by under the corn stalk bale when we moved it. Scared the $#*t out of me and I couldn’t scream or I’d scare the kids. Lol

Addy is growing like a weed, so I’ve recently replaced her wardrobe with bigger clothes. The only problem… Summer stuff is all gone so she’s wearing daisy dukes as we speak. She’s literally MOMENTS away from walking. I can tell she’s getting so close! The most exciting part: After Monday I get to be at home with her.. That means I’ll most likely get to witness the very 1st step!!
Any other Mom’s have a creative way to share to sell clothes? I’ve done okay on eBay… and Mom’s Shop & Swap (a Facebook page!) but I want something more. And no, not Craiglist. Too many freaks out there!

A tribute to my best friend

Not only did I hear one song that reminded me of you Mr. Carter, I heard about twenty. I kept listening after the first two and have been tuned in since. It’s your way of telling us everything’s going to be okay. I don’t want to believe it and I won’t just yet.

Every time I see a semi truck I think of you, every time someone cuts me off I honk my horn at them and flip them off (for the record I haven’t done these types of things since Addy was born) but now, I do it all the time. You always told me, “Don’t take their s@*t and I’m not going to. Every time I go to the mall, I see something I would have otherwise called to tell you about. When I’m driving along and hear a loud truck I hit the power button on the radio, to have a ‘moment’ to think things over.

Just tonight, I was thinking about my first winter driving. You took me out in the middle of no where and told me to drive us home without sliding off the road. I still use those skills too. I’ve used duct tape 4 times this week (3 at work) to fix something “Adam Carter Style”. Oh, and need I mention the time you saved me from getting ran over by a race car. If it wasn’t for you that crazy ass would have taken me out. Instead, you threw yourself into the car to save me. I’m not sure if I ever said thank you, so I’ll do that now. Thank you!

The day Addy was born, I knew she was my dream come true. But can a dream come true if your best friend and the one person who ‘gets’ you is gone? I think not. Dreams aren’t written in stone so I guess I’ll have to keep on writing to make it right again.

You always said, “with age comes wisdom and someday you’ll be as wise as me.” Yep, you’re right again. I’m still not as old as you but I know age has an effect. I wish you were here so I could call you at 12:01 just like I always have. Well, for many years I woke you up, but its all the same. I’d scream the Happy Birthday song in your half asleep ears and you’d tell me thanks. It’s one of those traditions we’ve never broken: I’m always the first to tell you Happy Birthday and you’re always the first to tell me. The next 23 days will be tough for me, there’s a ton of sentimental value in it for the both of us and I won’t have you to share it with this year. I’ll keep on doing my thing, and you’ll keep on doing yours. I miss you, your advice, and the ‘little things’ I could always talk to you about.
Happy 28th pal, you’re almost an old man.

It’s Monday, again?

Ok, today’s been a rather productive day. First of all, I have to say Addy was a PRINCESS today (besides dumping all 5 toy boxes in the floor) but hey, she doesn’t really know what cleaning up is! Tonight, I’ve dedicated 2 hours to couponing and setting up my Etsy page. Go check it out when you get a chance. I’m also busy working on my list of 100 things to do before I’m 100. Once I thought about it, I decided to make it 100 things in 1000 days. I need some life goals because really soon I’ll no longer have professional goals. If you haven’t heard, I’ll no longer be working this time next week!

Ok, to share a story about my shopping trip to Payless (Kroger) earlier. I overhear these two hillbillies looking at Pedialyte in the baby aisle, man says to woman, “That’s too expensive.” woman says to man, “We have vitamin water at home. That will work the same.” I think to myself OMG! Seriously?? I don’t drink the stuff regularly, but I do know several varieties have TONS of caffeine in them. And to think they’re giving it to a sick baby. I’m officially a Mom now, so I went up to them and said, “I can’t help to overhear your conversation. I’m not meaning to be nosey but am concerned. Do you know vitamin water often contains caffeine? The electrolytes are what Pedialyte is supposed to replace.” The nicely thanked me and grabbed the Kroger brand Pedialyte. Pheewwww. I feel like a hero.

I got 20 items at Payless for under $20 today while I was there. Each item regularly priced at or above $2.99. So, I saved over $40. $15 in coupons, the rest Plus Card savings. A couple of interesting finds: Swiss Cake Rolls for 88¢ (I know, they’re bad for you but I used to crave them when I was pregnant and thought I could use a nice relaxing moment of pulling the outside chocolate away from the cakes and munching away.) Activia desserts (a form of yogurt) 29¢ after coupon. It was on Manager’s Special for $1.29 and I used a $1 coupon I printed online earlier today.

***STEAL OF THE DAY!***

Hefty One Zip Bags, just 50¢ a box. Normally $3.59. They are on sale 10/$10 this week, and with the $1/2 coupon I scored (also printed online) it was like BOGO! I got 4 boxes today and plan on stopping again in a few days for 4 more (once I get more coupons printed!).

Night all. I’m off to work on a couple new bow designs 🙂

A couple of quick deals.

Okay, I wanted to share a couple of good deals, because I know other Moms use the same things as I do =) I got more Powerade for 38¢ today (Kroger extended their sale another week!) You have to buy 8 participating (or 16, 24, 32) items in one transaction. I also got lunchables for $1.16 (I know, sometimes they’re $1!) but that’s a great price for right now considering I haven’t seen them for $1 in like 4 months. Addy loves the ones with mini crackers & mini cheese!

Another great, no AWESOME find: Dannon yogurt. All Dannon yougurt, $1.88. I got Activia, Light & Fit, and most important Dan-O-Nino (Ad’s FAV!) for just 88¢ per pack after my $1 off coupons. These usually range upwards of $2-$2.50.

This afternoon I had some ‘Mommy time’ which meant I had to be productive and lay off the computer. I made a new style of bow, thought up a couple more ideas, got my order ready for more supplies, and re-arranged my back room. It was overflowing with my Y2K stockpile. Nothing can now been seen by the naked eye! I even did inventory on Addy’s Fall/Winter clothes and decided she only needs a couple items. Mostly shoes, socks, and hair accessories!

Dinner tonight: DISASTER. It was tasty, but I dropped my entire plate with smashed garlic tomato sauce on the WHITE rug. Thank goodness Grace likes people food and helped me clean, but the rug is still stained. 😦 We had cheese ravioli, french bread, and corn. (Bananas too for Ad). It was tasty! Half homemade but who’s watching?

PPM’s At It Again!!

I’ve been hiding for a couple of days… that’s because I’m trying to decide which hairbows to make next!

So, I’ve been searching for a freezer for months… not because mine doesn’t work- because I need more room to STOCK UP!!  So, I consulted my friend called Craigs List. I know, I know, creepy weirdos lurk there. Not this time, just one redneck in a jeep without bumpers. Super nice guy. I got a freezer (small one) that is less than 2 years old, with a warranty, for around $100. What a steal. I’ll save that in the next week, so it just paid for itself.

Oh oh! Pick me! I know, we can buy like 50 mac & cheese microwave dinners (my favs!!), bagel bites, and those YUMMY strawberries to freeze for winter when we can’t find fresh ones. I can hear the excitement in Addy’s voice. Lol

Okay, so I wanted to share that piece because I will be sharing some ‘freezer’ meals soon. I hope to cook up meals for those evenings when I just don’t feel like cooking. As most of you know by now, I will soon be staying home with Addy and that’ll be a new adventure for me. I’ve worked since June of 1999, without a break (other than a normal vacation). It’s time for me time, and Addy time. I plan on making a go of a couple of my hobbies to make some extra cash. Wanna learn more? Message me!

Oh, and on another note.. I want to make my bucket list. I think that would be AMAZING! First up, a tattoo. Yep, I wanna brave the pain and get a star since they are my favorite objects ON EARTH!

Oh Monday, I loathe the…

Ok, the day started off with a ‘bang’. The shower head fell off and pelted me, and the clock in my bedroom was 10 mins slow. That lead me to believe I had more time to get ready than I really did, and ALMOST made me late to work.

So, I get to work and endure hours of that. Yes, endure. It was SUCH a nice day out, I’d SOOO rather be at the park with Addy!

Ok, so to say the very least I got 498/500 points on my business plan (awesome!). I go to look at why I lost 2 points. Get ready for this… my typeface was too ‘artsy’. Eh? Seriously, for a very creative business Calibri is unacceptable?? As my professor said, ‘unprofessional’. Ok, whatever. So the plan was 93 pages when finished.. and I lost another point for not being double spaced. Who wants to read 186 pages? I sure as hell don’t!

You know when you drive by someone who is outside and think to yourself ‘I bet they shop at Wal Mart, or at the very least are on peopleofwalmart.com?’ Yep, that was me today. Here I am with my iPod, shorts, flip flops, ponytail out mowing the steep hill of a yard I have. I MUST add, with a non-motorized mower. Seriously? Why didn’t I try this before?? Besides going in a non-pattern of lines, it was great. There was no worry of chopping a toe when the mower throws a rock at you, or it taking off and running over the little birds I often see in my yard. Now, I’m sure the sight of me man-handling the mower up and down the hill was enough, I know I’d have thought about me as a ‘Wal Mart person’ as I drove by. It’s okay to talk about people if it’s yourself, right?
